Braising steak is a a really wonderful cut for those winter slow cook dishes. It is inexpensive and a really great for a hearty meal.
Tim ages all of his beef for a minimum of 28 days and sometimes longer to get the perfect flavour. The beef comes from either Tom Cleave in Ashburton or quite often the Lidstones Butchers own farm in East Allington, where the beef is raised by Tim's parents.
