Chuck steak is a really versatile cut that doesn't cost too much. If not prepared correctly this can be tough so for best results marinade your chuck steak overnight of for 4-6 hours before grilling in a hot pan, the marinade with tenderise the steak. Alternatively slow cook in a stock/wine for between 4-6 hours.
Tim ages all of his beef for a minimum of 28 days and sometimes longer to get the perfect flavour. The beef comes from either Tom Cleave in Ashburton or quite often the Lidstones Butchers own farm in East Allington, where the beef is raised by Tim's parents.
