Brisket is a slow roasting joint, it has wonderful flavour and is a great value cut for a Sunday roast.
Tim ages all of his beef for a minimum of 28 days and sometimes longer to get the perfect flavour. The beef comes from local farms, quite often the Lidstones Butchers own farm in East Allington, where the beef is grown by Tim's parents.
