Shoulder of Pork with Crispy Crackling!

When cooking a roast pork we love to make sure we get the cracking as crispy as possible... This can be done by scouring the pork skin and covering with vinegar and then sea salt, placing in the oven on a high temperature for 20 minutes before turning the oven down to medium for cooking.

Serve with a big dollop of apple sauce!

Roast Pork is especially good as it is Free Range from Kitley Estate. The pigs are raised outside, they have space to roam and are very happy pigs!
