Chicken, red pepper and french bean stir fry

Stir fry is a great mid-week meal that is quick and easy to make. We love using simple ingredients, when they are at their best. Peppers are currently fantastic as are French beans so this is what we used this week! Alternatives could be asparagus, mangetout or snow peas. This recipe is delicious served with noodles or sticky rice.


200g french beans, trimmed
6 tablespoons oriental sesame oil
2 skinless boneless chicken breast, cut crosswise into strips
1 red pepper, cut into matchstick-size strips
1 yellow pepper, cut into matchstick-size strips
2 tablespoon minced peeled fresh ginger
4 large garlic cloves, minced
6 tablespoons soy sauce
4 tablespoons rice vinegar
1 spring onion sliced


Serves 4

  1. Cook beans in pot of boiling salted water until crisp-tender, about 2 minutes. Drain. Refresh under cold running water.
  2. Heat 2 tablespoons oil in heavy medium pan over medium-high heat. Sprinkle chicken with salt and pepper. Add to pan; stir-fry until just cooked through, about 2 minutes. Transfer chicken to plate.
  3. Add 1 tablespoon oil to the pan. Add the pepper, ginger and garlic; stir-fry 2 minutes. Add chicken and beans to the pan.
  4. Stir in soy sauce and vinegar. Simmer until sauce thickens slightly, about 2 minutes.
  5. Garnish with spring onion. Serve hot.
