Hayley’s go to Orzo Salad

Orzo is a type of pasta; it is a light alternative to bigger pasta shells and really yummy. This is a great salad to have at a BBQ hot or cold.  Thank you to Hayley for this lovely recipe. 

Ingredients

500g Orzo pasta
1 Jar of sundried tomatoes (blushed if poss) - chopped
1 large red onion from Spindlebrook Farm
1 small jar of black potter olives
1 Gevrik - goats cheese
100g fresh coriander
30g mint
salt and pepper

Mays and Green mustard dressing

Method

  1. Cook the Orzo pasta according to instructions on the packet, allow to cool
  2. Chop the olives, sun-dried tomatoes and gevrik, mix together with the pasta
  3. Roughly chop the coriander and mint and add to the pasta, mix altogether and use the dressing as desired
