Sweet Potato & Spinach Curry with “Namoh Curry Sauce”

A great easy recipe that tastes delicious, packed full of veg, a real crowd pleaser!


100g Diced Sweet Potato
1 Red pepper
1 Red Onion
40g Chickpeas
50g Baby spinach
40g Mushrooms
1tbs Oil
2 sprigs of Fresh Coriander


Dice the sweet potato toss in salt, pepper and oil and roast in the oven for 30 minutes on at 180 degrees. Place the diced and seasoned red pepper on another tray and roast at the same time.

Put the oil in a saucepan and fry the onion and add mushrooms. Add the roasted sweet potato and roasted peppers. Add “Namoh curry sauce” to it.

Add the drained chickpeas and gently bring it to boil. Add the spinach and coriander, and season with sea salt and pepper. Cook until the spinach has wilted then serve with rice, naan bread or as sandwich mix.
